Healthy Eating on Vacation

As you are reading this post, I am enjoying a family vacation in the Upper Penninsula of Michigan. We usually take one big family vacation a year and this year we rented a home in the woods to unplug and get away from it all. I look forward to telling you all about it when I return.

This post however is all about preparing the food for our vacation. Normally wherever we go we find a Costco so we can stock up on food that we can afford to feed our hungry crew. Up in the U.P. however, we didn't think that was going to be an option so I decided we would stock up here and bring it with us.

I headed off to Costco and Whole Foods yesterday and I got all my proteins. I got some ground turkey that I browned and made into taco meat. We will use that to make nachos, quesadillas, or taco salad. I froze it so it could make the trip in the cooler and will last long enough.

I also bought some ground beef and made up some Italian meatballs. Most of my kids love pasta but my 17 year old hates it so I always like to make the meatballs so he can have something he likes too. I baked them and froze them too.

I bought enough chicken for two meals. I made two different marinades, adobo and Margarita and let them marinate in the freezer overnight and then froze them in their raw form. I will be able to thaw them and throw them on the grill.

I also bought some hamburger patties and bison hotdogs that are made with out nitrates, hormones, or antibiotics. Those will be easy to grill up.

For breakfast I made my own pancake mix with whole grain pastry flour and aluminum free baking soda and bought some plain yogurt that I will mix with honey, fruit, and wholesome energy bars I bought at Costco. I also hard boiled some eggs.

For lunch I got some lunchmeat and the standard PB&J for the kids. I will eat leftovers and salads.

For snacks I got some organic popcorn, organic chips and some not so healthy pretzels. It's all about balance.

I will hit a grocery store when we get up there and stock up on veggies to supplement these main meals and to save some room in our cooler. We are borrowing a huge cooler from our friends to make all of this possible.

It was a bit of work but I got it all done in one day and it is going to save us some serious cash and keep us eating a bit healthier while we are out and about.

Birthday Butter

My youngest son turned 8 on June 21st. We like to really celebrate birthdays around here. From the moment you wake up until the moment you go to bed, it's all about you. You get to pick where you want to go, what you want to do, and what you want to eat. You can't get yelled at and everyone else has to treat you like royalty. Let me tell you, my little guy ate that up.

For his dinner of choice he picked macaroni and cheese. I wasn't about to break open a box of the nasty stuff so I hit the Internet and found a scrumptious recipe of the real, honest to goodness macaroni and cheese. It was loaded with five different kinds of cheese and heavy cream. It was made with regular pasta and I even buttered the dish although I left out the pancetta at my son's request.

You might be surprised to hear that I made such a thing for my son on his birthday but I am not an extremist. I believe in the 90/10 rule which means we eat healthy 90% of the time and we splurge the rest of the time. Now to be honest I eat more like that but the kids are probably more like 80/20 and I think that is OK too.

I have to tell you that the smell that was coming out of the oven while this monstrosity baked was overwhelming. It was crazy good. Even though I am allergic to every single thing in it, I had to take a bite just to see what I had created and wow, was it delicious! The whole family loved it and thanked Aidan for his birthday request.

The next day we had a bit of heavy cream left over and we decided to make some butter with it. It is a simple thing to do but I wouldn't say it was easy. You simply put the cream in a jar with a tight fitting lid. Add a marble and start shaking. You shake and you shake and then you shake some more. You are supposed to get butter in about 20 minutes but it took us longer. It didn't help that for a long time the kids were shaking and I don't think they were really doing the best job at it. The important thing was that we were all having fun.

The key is to listen for the marble. In the beginning, you will hear it clanking around in the jar. Then when the butter starts to solidify you will stop hearing. You are not quite done yet. Keep shaking until you start to hear the marble clanking again. Strain off the buttermilk and enjoy.

It was THE BEST butter I have ever tasted. You can see my little guys eating it up on some bread. They couldn't get enough! Let me know if you give it a try.

A New Stage in Life

This one goes out to my son Dallas who is going to prom tonight and graduating highschool on Sunday. I heard it on the radio last night and it brought a little tear to my eye. It's amazing how fast the time has gone by. It seems like just yesterday he was my little peanut that I brought home from the hospital, weighing only 6 lbs 2 oz. Now he is taller than me and about to begin a new stage of his life. Wow.

Thursday is my day to see my grandkids, which brings me a lot of joy.Their funny stories and antics and their enthusiasm about life in general is so refreshing.

Bryce, who is 6, just started T-ball for the summer. I drove him to practice last week and stayed for awhile to watch. The coach had the boys line up along a fence to talk to them. One little guy starting harassing Bryce, grabbing his arm. Bryce kept telling him to stop but the kid was paying no mind. The coach wasn't saying anything either.

I turned to talk to someone behind me for a minute and when I turned back, there was Bryce sitting on top of the antagonist. All you could see of the boy was his little head and arms flailing about. Both boys were laughing. At that point the coach finally seperated them.

I chuckle everytime I think about that scene. Maybe the big leagers could learn something from the littleguys.

I am thankful that I was able to spend the whole day with my dad yesterday during his experimental drug infusion for Alzheimer's. We watched Second-Hand Lions while we were waiting, and he enjoyed it thoroughly.

I woke up this morning to the sounds of birds chirping. I looked out my window at the fresh, green earth, trees in blossom, and a parade of hyacinths, daffodils and tulips; it felt great to be alive. After saying good morning to Mom and my little bird, Pookie , I made a cup of coffee and went outside. What greeted me was a wheel barrow full of dirt clods, mud encrusted work gloves and shoes, shovels, rakes, edgers and other assorted yard tools, myriad plants in pots waiting to be planted, and a trail of dirt that led across the driveway and all the way up the front sidewalk. Where do I start?

The fact that I'd spent the past few days planting, edging and moving a whole lot of dirt didn't change the fact that there was still a lot left to do. My back was aching and my legs were sore but still . . I felt happy. I realized just how lucky I am to be able to be outside working in the garden on such a beautiful day. I felt grateful to be able to fulfill Mom's passion for the garden — she is 88 and can't get down on her knees anymore, but she can enjoy the garden through my efforts. All the more reason to be grateful that I still have the physical capacity and energy to get the job done.

It is 6:00 PM and the garden is shaping up. I am tired but jubilant, and Mom is excited to see things popping out of the ground. Tomorrow is another day, but already there is much joy in it. These are the grateful moments I wanted to share with you.

I am thankful that spring is here. I am so lucky to be able to drive down this street that is lined with these gorgeous trees. I love waking up to the sound of the birds singing, and the sun, oh the sun! It is so great to have it back, shining down and warming me. I can't tell you how thrilled it makes me to see a blue sky instead of the dreary grey one that I have grown so accustomed to over the winter. It's glorious. There is something about the air in spring. It is full of inspiration and excitement. It makes me want to do a happy, spring dance!

This week I am most thankful that no one on my street was hurt when a young, 19 year old boy crashed into a tree while he was driving drunk.

Normally there are kids all over the neighborhood outside playing. Within a 10 house radius there are over 25 kids and they are always out playing ball, riding bikes and all that fun stuff.

On Tuesday, the only one out there was my 7 year old. He was playing basketball in the driveway. He came running in and told me what had happened. I went outside right away and it was immediately apparent that the boy was altered in some way. A neighbor called the police and the boy was arrested. The above picture was taken over an hour after the accident happened.

I couldn't help but be grateful that my son's basketball didn't roll out into the street while the boy barreled down the block. It was quite apparent he was going very fast by the looks of the car. It was totalled.

As I stood by watching what happened one of the neighborhood teenagers said, "Thank God no one got hurt. This would have been a whole nother situation." Truer words were never spoken. It really makes you think about what is important and how things can change in a blink of an eye.

That night as I tucked the boys in bed we sat and talked for a little longer than normal. I just didn't want to let it end, so grateful for having them.

Inspire Your Kids Creativity With Food

It's funny how life takes over sometimes. We are so busy running here and running there that we are often going through the motions, getting things done. That's how it is around here with getting food on the table.


I must confess, I am not in love with cooking. I grew up in a restaurant family. We ate out every day. There wasn't a lot of cooking going on in our house. In fact, it would not be an exaggeration to say that we ate dinner at home on Christmas and Thanksgiving, maybe Easter. That's it.


Now that I have 5 kids, that is simply not an option so I cook dinner most nights and I make lunches most days so my kids can have healthier foods. I tend to go for what is quick and easy and I do most of it myself because it is just easier that way.


I do let the kids get their own snacks. We always have fruit and veggies available and some healthy chips etc. Most of the time they grab an apple but sometimes they will get creative and make a smoothie.

The other day they really impressed me with their creativity when they came up with this snack idea. They cut up their apples and bananas. Spread some peanut butter on the apple slices, topped them with the banana and sprinkled some ground flax seed and cinnamon on top.

They loved eating the snack and it was amazing to see the pride in having come up with it all on their own. I think they enjoyed it even more.


This incident has got me thinking about taking time out of the day and giving them the materials to create their own meals. They can take ownership of what they are eating and it will help them to think outside the box.


I am thinking about giving them a challenge with different ingredients and giving them a time limit to create their own special dish. What fun that would be. I will keep you posted.

Food Revolution

Have you seen Jamie Oliver's new show? I loved it and I am so excited to have him on television bringing awareness to healthy eating. I commend him for his courage and his perseverance. I have to say there were times that I felt exhausted just watching him go against the system.

It is a sad but true fact that change is difficult. We don't like change even if it is for our own good. Sometimes we can't see beyond our own safe little box to see what's on the other side. That seems to be what is happening in this town. The suspicious radio DJ and the obstinate school lunch cook are perfect examples of why it is so hard to push change.

The truly exasperating part is the bureaucracy that is in effect in the name of protecting our children. The school lunch guidelines are a joke as is the amount of money these schools are given to purchase food for our children. Seriously, we as a country need to come to grips with the fact that the less money we spend on food, the more we will be spending on health care, not to mention having to deal with illness and early death.

Industrialized farming, genetically modified crops, fertilizers, pesticides, growth hormones, antibiotics, government subsidizing are all reasons why we spend less of our income on food. These are the same things that are giving us food that is nutrient deficient and contribute obesity, pollution and antibiotic resistant microbes.

In my school district, lunch costs $1.80. $1.80?!? You can't get a happy meal for that. What makes us think the lunch they provide will be any better than a fast food meal?

In fact, I got my district's monthly lunch menu and it is appalling! Here are some of my favorite lunch choices:
  • soft pretzel bites with cheese
  • home run hot dog on a bun
  • fly ball cheeseburger on a bun
  • french toast sticks with sausage
  • ballpark beef nachos
  • string cheese, yogurt and Pretzel meal
This is not lunch food! It is snack food at best and more honestly it is a bunch of chemicals, preservatives, sugar and fat that is giving children no nutritional value.

And people wonder why I make my kids' lunches!

What's going on in your school district? Are your kids getting food for lunch or are they getting garbage? I have to say, the lunches that I saw on Jamie's show look actually better than the ones they serve in my district. Scary stuff! Tell me what's going on in your neck of the woods.

Is Time Passing You By?


Sitting in my office this afternoon I looked out my window at the tree in my front yard. My pumpkin colored wall framed the brilliant orange and red leaves. In the moment that I looked up, my breath was taken away. There was such beauty there with the deep orange and crimson colored leaves. Right here in the middle of the suburbs with the mini vans whizzing by.

The funny thing is that I am sure that tree has been that color for days now and in my rush to get everything done and to be everywhere I need to be, I never “saw” it. It got me thinking about all of the beauty that I’ve been missing as the days speed by in the life of the ever hectic mom.

How many days have gone by where I’ve missed the sparkle of the sun shining through my window for that brief moment in the middle of the day? When was the last time I really listened to the buzzing of the bees as they go about their busy work in my garden? I can’t remember the last time I took time out of my life to just go for a walk in the woods and breathe in the fresh air and admire the beauty of nature.

Then it really hit me. What else had I been missing? The greatest beauty of any mom’s day…the beauty of a child’s smile or their light hearted giggle? Have I truly taken time to savor all of those moments that occur spontaneously throughout the day? Do I give my children single pointed focus when they are speaking to me? Do I genuinely look at them; see them for who they are? How often do I savor my sweet boys, engulf myself in their scent and just be with them in the moment?

I have a 17 year old son who is graduating high school in January. As it seems every wise and “mature” parent will tell you, the time flies by. I can’t believe that he is a young man and no longer wants to cuddle and snuggle with me. I know I have had many beautiful moments with him and all of my boys and I want more. I don’t want to miss them.

As a mom of five boys I am acutely aware of how busy life can be and how much there is to get done in one day. I am deciding today to schedule in cuddle time, snuggle time and lovin’ time with my boys just as I do dentist appointments and grocery shopping. I am committing to practice giving my children my undivided attention. No more reading my email while they are talking to me or doing something else while they are trying to tell me a story.

I invite you to join me in this experiment to see how differently your days play out. I am willing to bet that not only will it bring you joy and happiness but it will affect your children in a powerful way. They will not only feel the love that you have for them but they will be learning how to be in the moment themselves.

As I sat here typing, my youngest son Aidan just came up to me and climbed into my lap. I immediately stopped what I was doing, wrapped my arms around him and began the automatic mommy rock. In that moment, I was overcome with the love that is always available for me but that I don’t always take the time to feel. It brought a tear to my eye. In about 60 seconds it was over. He jumped off and ran off to finish his homework. I looked up at that autumn tree and sent it a wave of gratitude for allowing me to see its beauty and the beauty that is all around me.
